There are several observing projects you can do using the Galileoscope. Two good projects to start with are tracking Jupiter’s Galilean Moons and watching the phases of Venus. In the Footsteps of Galileo is a guide to observing the moons of Jupiter. It uses simulated views to get the students used to tracking the Moons. Once students learn how to track the Moons, they can try it with their Galileoscopes.
Observing the phases of Venus is a longer term project as the phases of Venus progress over several weeks to months.
